Jalapeno Puffs Recipe

Ingredients
  • 2 eggs
  • 2 egg whites
  • 1/2 cup skim milk
  • 1/4 cup green onions -- chopped
  • 1/4 cup reduced-fat sharp cheddar cheese -- shredded
  • 2 tablespoons jalapeno slices -- drained
  • 1/3 cup flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
Directions
  1. Preheat oven to 425° F. and heat 24 mini-muffin cups until hot. 
  2. Blend all ingredients in a blender at medium speed about 30-45 seconds.  
  3. Spray hot muffin cups and fill immediately 2/3 full.  
  4. Bake about 10 minutes until puffed and lightly browned. 
Makes 8 servings of 3 puffs each.
