Jamaican Jerk Seasoning

Ingredients

  • 6 green onions (a.k.a. scallions or spring onions)
  • 1 to 3 scotch bonnet peppers (you decide how hot you want it)
  • 2 teaspoons all spice berries (or 1 teaspoon dried and ground)
  • 1 tablespoon fresh thyme (or 1 1/2 teaspoon dried)
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • salt and pepper to taste
  • 1/4 cup cane vinegar (or cider vinegar)
  • 1 tablespoon olive oil

Preparation:

  1. Grind the above ingredients together in a mortar and pestle or with a food processor/blender.
  2. Store in a glass container in the refrigerator.
