Scottish Cheddar Vegetable Soup Recipe

Ingredients
  • 2 cups of chicken broth
  • 2 cups of milk
  • 2 carrots
  • 3 celery sticks
  • Half cup of flour
  • Half cup of butter or margarine
  • 1 pound of Extra Old Cheese
  • Salt and pepper to taste
Directions
  1. Finely chop up carrots and celery.  Saute and butter.  
  2. Add flour and mix until sticks to vegetables on medium heat.  Add chicken broth.  Let simmer till veggies are tender.  Add milk. Cube up cheddar and add.  
  3. Turn heat to low and stir until melted.  
Serves 4 helpings.
